Potluck Sausages with Gnocchi, Kale & Squash

Great things happen when you bring a bunch of delicious ingredients together. This creamy one-pot kale and squash gnocchi dish gets topped with our sizzling sausages fresh off the grill for a meal worthy of any dinner party.

  • 1pkg Mitchell’s Double Smoked Sausages
  • 2cups premade gnocchi
  • 1tsp chili flakes
  • 1clove garlic, finely chopped
  • 2cups chicken stock
  • 3cups kale, stalks removed, roughly chopped
  • 1cup butternut squash, cut into 1/2” thick pieces
  • ½ cup Italian parsley, roughly chopped
  • cup parmesan cheese, grated
  • 1tbsp butter
  • 1tbsp olive oil
  • Salt and pepper to taste
  1. Preheat BBQ to 350°F.
  2. In a large non-stick pan on medium high heat, add some oil and butter along with the gnocchi and cook, stirring occasionally, until lightly golden (approx. 3 to 5 minutes). Remove the gnocchi from the pan put it aside.
  3. Turn that heat down to medium low and add the garlic and chili flakes. Cook for 30 seconds until you can smell the deliciousness. Then, stir in the squash.
  4. Add the chicken stock, give it a stir, and bring it up to a boil. Reduce the heat to a gentle simmer and cook for 5 to 7 minutes, until the squash is as tender as you like it. Add more chicken stock if you need to.
  5. Next, stir in the kale and cook for another 2 to 3 minutes until the kale has wilted. Bring the gnocchi back to the party along with the parsley, and give it a good seasoning with salt and pepper.
  6. As you let those flavours meld together, pop the sausages on the grill and cook them according to the package directions.
  7. Flood a large platter with that tasty gnocchi mixture. Then, sprinkle on the parmesan cheese and top the dish with those fresh-off-the-grill sausages. Enjoy!
